Ingredients:
2/3 cup Sliced Carrot |

1/2 Cup diced Onion |
2 cloves Garlic (minced) |
|
3 cups broth (beef, chicken) |
1 Cup Shredded cabbage |
|
1/2 Cup green beans |
1 tbsp Tomato Paste |
|
1/2 tsp dried Basil |
1/2 Cup Diced Zucchini |
|
1/4 tsp Dried Oregano |
1/4 tsp Salt. |

Directions:
- Spray large saucepan with nonstick cooking spray and saute carrot, onion and garlic over low heat until softened.
- Add broth, cabbage, beans, tomato paste and spices and bring to boil.
- Reduce heat and simmer covered for about 15 minutes.
- Stir in zucchini and heat 3 to 4 minutes. Serve hot. Makes 4 servings.
Serving Options:
- Good with crackers or toasted bagel.
- Can experiment with spices for different tastes.
