Ingredients:
1 lb. Ground Beef |

Chili Powder (to taste) |
1 Medium Onion (Chopped) |
|
Salt (to taste) |
1 Large tin kidney beans (drained) * |
|
Pepper (to taste) |
1 Large tin chopped tomatoes * |
|
1/4 tsp. Cummin Seed |
1 cup Chopped Celery |
|
1 tsp. Cooking oil |
Directions:
- Brown ground beef in oil. Add onion and celery and cook until onion is transparent.
- Add beans, tomatoes and spices. Bring to boil and then reduce heat, cover and simmer for 1 hour stirring occasionally.
- If watery add instant mashed potatoes to thicken before serving. If bitter add brown sugar.
Serving Options:
- Serve in bowl with salad or vegie sticks & crusty bread. Can top with grated cheese.
- Thicken with instant mashed potatoes. Spoon into centre of oiled tortilla, add slice of mozzarella or cheddar cheese. Rolland bake in covered casserole at 425 for 15 to 20 minutes. Serve burritos with sour cream (or mayonnaise) and salsa.
- Natchos - Spoon over corn chips, top with grated cheese and heat in microwave. Serve with sour cream, salsa, chopped tomatoes & onions and shredded lettece.
Notes:
- * can make go farther without affecting the taste by adding an additional can of beans and tomatoes.
