2/3 cup Sliced Carrot 1/2 Cup diced Onion
2 cloves Garlic (minced) 3 cups broth (beef, chicken)
1 Cup Shredded cabbage 1/2 Cup green beans
1 tbsp Tomato Paste 1/2 tsp dried Basil
1/2 Cup Diced Zucchini 1/4 tsp Dried Oregano
1/4 tsp Salt.  
  1. Spray large saucepan with nonstick cooking spray and saute carrot, onion and garlic over low heat until softened.
  2. Add broth, cabbage, beans, tomato paste and spices and bring to boil.
  3. Reduce heat and simmer covered for about 15 minutes.
  4. Stir in zucchini and heat 3 to 4 minutes. Serve hot. Makes 4 servings.
Serving Options:
  • Good with crackers or toasted bagel.
  • Can experiment with spices for different tastes.
